It’s Cookie Swap day!! Today I’ve teamed up with a huge group of bloggers to give you tons of options for cookies right before Christmas!! My partner for the swap was Jenn from Endlessly Inspired who shared with me her Icebox Cookie Recipe. I followed her recipe, but ended up adding in sprinkles and crushed candy canes to make them a bit more festive!! Here’s my version of Santa’s Favorite Brown Sugar Cookie!
Here’s the recipe:
2 c brown sugar
1 c butter, softened
2 eggs
1 tsp vanilla
1 tsp baking soda
1/2 tsp salt
1 tsp cream of tartar
4 c flour
1. Mix brown sugar and butter together until creamy. Beat in eggs and vanilla until thoroughly combined.
2. In a medium bowl, combine baking soda, salt, cream of tartar and flour. Gradually add to wet ingredients and mix until just combined.
3. On a lightly floured surface, shape the dough into two rolls. Tightly wrap each roll in waxed paper. Chill at least overnight.
4. Cut into 3/8-in. slices and place on parchment-lined baking sheets. Bake at 350° for 6-8 minutes. Remove to a wire rack to cool. Yield: about 5 dozen.
